Cheesy Squash and Jalapeno Fritters

2 C. grated squash
1/2 small jalapeno pepper, diced
1/4 C. finely chopped onion
1/2 C. shredded cheddar cheese
1 large egg, beaten
1/4 C. + 1 T. all purpose flour
1/4 tsp. each salt and pepper

Combine all the ingredients in a bowl and mix well. Heat enough veg. oil to cover the bottom of a skillet over med. high heat. In batches, drop by spoonfuls in the oil and slightly flatten. Fry till golden on both sides, drain on paper towels. This will make approx. 7-8 depending on the size of your fritters.
