Crispy Baked Asparagus
1 bunch fresh asparagus
2 large eggs
1/2 C. all purpose flour
1 C. panko bread crumbs
1/4 C. grated parmesan cheese
2 T. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
Cut the woody ends off the bottom of the asparagus. Whisk the eggs in one dredging dish, place the flour in another and combine the remaining ingredients in another. Roll the asparagus in the flour, then dip into the eggs and then roll in the panko. Place on a baking sheet that has been sprayed with cooking spray. Continue with remaining asparagus. Bake in a 425 degree oven for 6 minutes, remove and turn each spear and return to the oven for an additional 5 minutes.
