Fresh Apple Cake
1 1/4 C. vegetable oil
2 C. sugar
3 large eggs
2 tsp. vanilla extract
3 C. self rising flour
3 C. chopped apples (any variety)
In a mixing bowl, beat together the first 4 ingredients for 1 minute. Add all the flour and beat for 1 minute or until nice and thick. Stir in the apples, combine well. Pour into a 10" tube pan that has been greased and floured. Bake in a 350 degree oven for 50-60 minutes or until a cake tester comes out clean.
Sauce
1 stick butter (not margarine)
1 C. packed light brown sugar
1 tsp. vanilla extract
1/4 c. evaporated milk
Combine all ingredients in a saucepan and bring up to a slow boil, whisking often, boil for 1 minute. Once cake is out of the oven, allow to slightly cool but still be warm and pour the sauce over the cake.
