Turmeric Chicken Salad (approx. 2 servings)
1 1/2 C. diced leftover chicken
1/2 rib celery, diced
1 green onion, finely chopped
2 T. diced red bell pepper
2 T. mayo
1 tsp. dijon mustard
1/4 tsp. ground turmeric
1/4 tsp. each salt and pepper
Combine everything in a bowl, cover with plastic wrap and place in the fridge for 30 minutes before serving.
