Veggie Salad (1-2 servings)




Veggie Salad (1-2 servings)

1 C. chopped cucumbers
8 large grape tomatoes, quartered
1/4 C. chopped red onion
1 lime, juiced
1 T. olive oil
1 T. rice vinegar
pinch each of salt, pepper and dill
3 fresh basil leaves, chopped
1 T. grated parmesan cheese

Combine all the ingredients in a bowl and chill for 30 minutes before serving.
