Parmesan Roasted Acorn Squash
1 acorn squash (1 1/2 - 2 lbs)
2 T. olive oil
1 T. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
1/2 tsp. smoked paprika
1/4 C. grated parmesan cheese
Carefully slice the squash in half and scoop out the seeds (save them and roast them for snacking later). Slice each half into 1/2" slices, leaving the skin on. Place the slices in a bowl and add the remaining ingredients. Use you hand and toss to coat them well and place in a single layer on a baking sheet. Bake in a 400 degree oven for 30 minutes.
