Summer Cucumber Salad






Summer Cucumber Salad

1 small cucumber, thinly sliced
1/2 of a small onion, thinly sliced
1 C. water
3 T. rice vinegar
2 T. sugar
1/2 tsp. salt
1/4 tsp. pepper

Place the cucumbers and onions in a bowl. Whisk together the remaining ingredients and pour over the veggies. Cover and place in the fridge for at least 3 hours prior to using. Will keep for 3-4 days.
