Simple Fajitas
3/4 lb. leftover flat iron steak or roast, sliced thin
2 T. vegetable oil
1 large onion, halved and sliced
1 large red bell pepper, seeded and sliced
1 tsp. adobo seasoning
4 flour tortillas, warmed
Heat the oil in a skillet over med. high heat. Add the onion and bell pepper, cooking for 6-8 minutes till tender. Add in the meat and seasoning, tossing to coat. Cook just until the meat is heated through. Serve with warm flour tortillas.
