Creole Fried Shrimp





Creole Fried Shrimp
1 lb. large shrimp, peeled and deveined
1 large egg
1 T. hot sauce
1 1/2 T. plus 1/2 tsp. cajun seasoning (I used Slap Your Mama's)
1/2 C. all purpose flour
1/4 C. cornmeal
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. cayenne pepper
veg. oil for frying

Place the shrimp in a bowl, whisk together the egg, hot sauce and 1/2 tsp. creole seasoning. Pour over the shrimp, stir to coat, cover and place in the fridge for up to 2 hours. In another bowl combine the flour, cornmeal, remaining creole seasoning, onion powder, garlic powder and cayenne pepper. Heat 1/2" veg. oil in a cast iron skillet or heavy bottom skillet to 350 degrees. Toss the shrimp in the egg mixture again then take each piece and dredge in the flour mixture. Carefully fry the shrimp in batches for approx. 3-4 minutes till golden brown. Drain on a paper towel lined plate.
