Okra Fries
small mess of okra (about 10-15 pods)
1 large egg
1/2 C. milk
1/2 C. flour
1/2 C. cornmeal
1/4 tsp. cayenne pepper
1/4 tsp. garlic posder
1/4 tsp. salt
veg. oil for frying
Wash your okra and set aside. Whisk together the egg and milk in a bowl and add the whole okra pods to the mixture and let sit for 15 minutes. In another bowl combine the flour, cornmeal and seasonings. Heat 1" of oil in a heavy bottom skillet over medium high heat. Once glistening, take the okra and dredge into the flour mixture then back in the egg and once again in the flour mixture. Carefully add the okra to the skillet and fry till golden all over, turning if necessary. Okra fries up fairly quickly so this doesn't take but just a few minutes. Drain on a paper sack or paper towel lined plate.
