Grilled Rib-eyes

2 rib-eye steaks, boneless
olive oil
my all purpose seasoning (2 T. smoked paprika, 1 T. salt, 1 T. brown sugar, 1 T. Adobo seasoning and 1 tsp. pepper...combine and store in an airtight container)

Rub both sides of the steak with a little olive oil. Season both sides generously with the seasoning. Place in the fridge for 1 hour. Pull the steaks out and let them sit at room temp. for 20 minutes. Fire up the grill getting it good and hot. Grill steaks for approx. 5 minutes then flip and cook for 3 more (rare, my preference) or 6 minutes, flip and cook for 4 minutes (med. rare) or 7 minutes, flip and cook 5 minutes for medium.
