Stuffed Tomatoes
6 plum tomatoes
salt
fresh baby spinach
1 mozzarella stick, cut into 6 pieces
olive oil
pepper
Slice the tops off the tomatoes and scoop out the inside, make sure not to damage the outer part, place the tomatoes in a baking dish. Sprinkle the inside of the tomatoes with a little salt. Press a couple of spinach leaves down inside each tomato then place a piece of the cheese stick down inside. Take 3 spinach leaves and slice them very thin and sprinkle over the tops along with a drizzle of olive oil then a tad of pepper. Bake in a 375 degree oven for 15 minutes. Pop under the broiler for 1-2 minutes.
