Homemade Pizza Dough (Makes 2 medium or 1 really large)
1 1/4 C. warm water
1 1/2 tsp. instant yeast (active works also)
1/2 tsp. sugar
1 tsp. olive oil
2 1/2 C. to 2 3/4 C. all purpose flour
1/2 tsp. salt
Put the water, yeast and sugar in the bowl of a stand mixer, allow to proof (foam up) for 5 minutes. With a dough blade attached begin mixing and add the oil along with 2 1/2 C. flour and the salt. Mix on low speed till a ball begins to form, test it with your finger as it should not be really sticky, if it is add more flour till your dough is soft to the touch. Turn out and knead the dough on a lightly floured surface for 7 minutes. Shape into a ball and place in a greased bowl. Cover with plastic wrap and allow to rise for 2 hours. Punch down the dough and stretch it into one large pizza or 2 medium pizzas. Top with your favorite sauce and toppings. Bake in a 425 degree oven for 10-12 minutes. For a crispier crust, prebake the crust for 6-7 minutes before adding your toppings.
